Keine Fingerringe, keine Ohrringe, sondern viele Wurstringe. Zurzeit arbeite ich mich in der Metzgerei Böbel an der Füllmaschine ein. Das heißt unter anderem jeden Mittwoch viele Stadtwurstringe füllen. Die Einfachen und Hausmacher Stadtwurstringe werden anschließend geräuchert und dann gebrüht. Wird weiße Stadtwurst hergestellt, entfällt der Schritt des Räucherns.
Füllen ist gar nicht so einfach, wie es immer aussieht. Auch hier gibt es einiges, dass man wissen muss:
- Welchen Darm brauche ich? Wie lange muss dieser bestenfalls einweichen?
- Wo steht auf dem Produktionsplan wie viele Ringe ich von welcher Sorte benötige?
- Welches Programm auf der Füllmaschine ist für Stadtwurst?
- Wie fest kann ich Füllen? Wann platzt der Darm? Ist der Ring zu locker gefüllt?
- Hält der Clip beim Aufhängen auf den Räucherstecken?
All das galt es rauszufinden und zu lernen, um ein Gefühl dafür zu entwickeln, ob die Wurst richtig gefüllt ist. Mittlerweile klappt das schon deutlich besser als am Anfang.

Nor finger rings or earrings, but sausage rings. I am getting more practice at the filling machine in the butcher shop Böbel at the moment. This means for example filling `Stadtwurst´ every Wednesday. The plain and homemade `Stadtwurst´ (a traditional Franconian sausage produced of fine `Einfach´ or coarse `Hausmacher´ sausage meat) gets smoked and cooked after filling. White `Stadtwurst´ is produced without smoking.
Filling is not as easy as it looks like. Even here you have to know the answer to the following questions:
- Which casing do I have to use? How long do I have to put this in water?
- Where is written on the production plan how much sausages I have to make?
- Which program of the filling machine is for `Stadtwurst´?
- How strong can I fill? When does the casing burst? Is the ring filled to loose?
- Does the clip hold when putting on smoking sticks?
All that is important to find out and learn for getting a sense if the sausage is filled correct or not. Meanwhile filling is a lot faster than at the beginning.
