Am Wochenende war ich zum ersten Mal mit der Nationalmannschaft des Fleischerhandwerks unterwegs. Für mich und drei andere Mitglieder ging es zur Familie Delle nach Gundelfingen.

Dort durften wir, die Mitglieder der Nationalmannschaft mehr über die Angus Rinder erfahren.

Für mich war besonders spannend welche Zuchtwerte – z. B. leichte Abkalbung, gutes Wachstum, besondere Marmorierung – für die Familie besonders wichtig sind. Und wie mittels Ultraschall-Untersuchungen die Rückenmuskelfläche und der intramuskuläre Fettanteil am lebenden Tier bestimmt werden kann.

Wusstet Ihr, dass Rinder vor so einer Auktion gestylt werden? Ich auch nicht! Auf jeden Fall ein sehr lehrreicher Einsatz.

Danach waren dann wir dran. Unsere Aufgabe war es ein halbes Rind zu Zerlegen, moderne Cuts vorzustellen und Empfehlungen für die richtige Zubereitung zu geben.

Diesen Einsatz werde ich nie vergessen. Freue mich schon auf den nächsten in 18 Tagen 😊.

First mission

I had my first mission with the national team of craft butchers. Three other members and I were invited to the family Delle in Gundelfingen.

There we got to know more about Angus Beef. Which breeding values – e. g. easy calving, improved growth of the animal, marbling of the meat – are important for the family Delle was particularly interesting for me. And how the back muscle and intramuscular fat is measured using an ultrasound examination.

Did you know the cattle gets styled before an auction? I didn’t! It was an educational mission.

After this it was our turn. Our part was to dismember a half of beef, introduce modern cuts and give advice for preparation.

I will never forget this mission. Looking forward to the next in 18 days 😊.

Am Wochenende fand das Jahrestreffen 2024 der Nationalmannschaft des Fleischerhandwerks in der Rhön. Dieses Jahr war ich erstmalig dabei, nachdem ich mich letztes Jahr am Auswahlwettbewerb zur Nationalmannschaft qualifiziert habe und nominiert wurde.

Freitag sind die neuen Mitglieder angereist und haben sich beim gemeinsamen Abendessen kennengelernt. Samstagvormittag gab es dann für die neuen Mitglieder eine Einführung mit:

• Begrüßung
• Kennenlernen der Ziele, Aufgaben, Lebenszyklen, … der Nationalmannschaft
• Erläuterung der Kommunikationsregeln
• Kommunikations- und Medienschulung
• Vorstellung des Social-Media Aktivitäten

Bis zum Mittagessen sind die anderen Mitglieder angereist. So konnte man sich bereits beim Mittagessen etwas kennenlernen, bevor der Team-Workshop am Nachmittag folgte. Mein Highlight zum Kennenlernen des gesamten Teams war das Outdoor-Event.

Dabei haben wir uns für den Spaziergang in 3er-Reihen hintereinander aufgestellt. Nach jeder Fragerunde hat sich die linke Person eine Reihe nach hinten bewegt, die Person in der Mitte ist an der Position geblieben und die Person auf der rechten Seite ist eine Reihe nach vorne gewandert. Ziel war es, dass sich jeder mit jedem einmal kurz unterhalten hat. Dabei wurden uns Themen wie Musik, Urlaub, Sport und viele mehr vorgegeben.

Am Sonntag gab es dann einen Rückblick auf das Jahr 2023, außerdem wurde auf die Verhaltensregeln eingegangen. Danach wurde ein Ideen-Workshop durchgeführt, um Ideen für Projekte zu sammeln, die 2024 angegangen werden können.

Ich freue mich jetzt Teil eines so großartigen Teams sein zu dürfen. Herzlichen Dank für die Aufnahme.

Annual meeting 2024

This weekend was the annual meeting 2024 of the national team of craft butchers. I was part of it for the first time this year, because I qualified myself at the selection process last year and have been nominated.

The new members arrived on Friday and got to know each other at dinner. On Saturday morning we had an introductory event:

• Welcoming
• Getting to know goals, tasks, life cycles, … of the national team of craft butchers
• Explanation of the communication rules
• Communication and Social Media course
• Presentation of the different Social Media activities

Until lunch the other members arrived. So, we could talk to each other at lunch before starting the team-workshop in the afternoon. My personal Highlight was the outdoor event.

For our walk we formed rows of three people which were ranged in a row. After each question round the left person walked a row back, the person in the middle stayed at the position and the person on the right stepped one row forward. The goal was giving everybody the chance to talk to everybody. Therefore, we were dictated different themes like, music, holiday, sports, and a lot more.

On Sunday we had review of the year 2023 and the rules of behaviour got explained. Furthermore, we had a workshop to bring forward new project ideas for the year 2024.
