Hängend vs. Liegend

Wie löse ich die Keule am Besten aus? Was ist der richtige Weg? Schonmal vorweggenommen, den EINEN richtigen Weg gibt es NICHT. Es gibt viele verschiedene Wege die zum Ziel führen

Das Bild ist entstanden, beim Ersten Mal als ich die Keule im Hängen zerlegt habe. Technik üben am Kleinen, also am Kalb und dann das ganze übertragen auf’s Große. Schon praktisch, wenn die Kalbskeule auch im Kühlraum hängt.

So war es dann einfacher die Oberschale mit Schlossknochen bei der Rinderkeule abzulösen, da ich wusste wo ich entlang muss.

Die Keule habe ich jetzt schon im Hängen und im Liegen ausgelöst. Beim Auslösen im Hängen war mir schon klar, dass ich das so nie mehr machen werde. Und das, obwohl es erheblich Kraftsparender für mich ist, da die Schwerkraft einen Großteil der Arbeit erledigt.

Das Einzige, das ich weiterhin im Hängen auslösen werde, ist der Schwanzknochen, das geht einfach besser.

Was spricht für mich gegen das Auslösen im Hängen? Da ich nicht unbedingt die Größte bin, muss ich mich auch mit „Podest“ strecken, damit ich anfangen kann die Oberschale abzulösen. Es dauert auch länger die einzelnen Teilstücke zuzuschneiden – vielleicht habe ich da aber auch noch nicht die richtige Technik gefunden. Wenn ich im Liegen auslöse, entferne ich immer gleich das Fett, auf der Oberseite der Oberschale oder „rolle“ die Kugel aus der sie umgebenden Fettschicht heraus. So habe ich mir das Fett wegschneiden gespart. Im Hängen geht das finde ich nicht so angenehm.

Ist die Oberschale dann von der Keule zusammen mit dem Schlossknochen abgelöst, muss man diesen dann wieder von der Oberschale lösen – das ist auch irgendwie doppelte Arbeit, weil man das Ganze zweimal anfassen muss.

Zum Glück ist jedem selbst überlassen, welchen Weg man wählt. Der eine löst halt lieber im Hängen aus und die andere lieber im Liegen. Das Ergebnis ist aber immer das Gleiche: die fertig zugeschnittene Oberschale gelangt in den Verkauf und es werden Rouladen geschnitten. Wie man die Keule ausgelöst hat, um die Oberschale und die anderen Teilstücke zu erhalten ist letztendlich egal.

Es ist aber definitiv von Vorteil beides einmal gesehen und gemacht zu haben. Denn nur so kann man den richtigen Weg für SICH wählen.

Vertical vs. horizontal

How do I remove the bones of the hindquarter best? What’s the right way? There is NOT ONE right way. There are multiple ways which lead to the same finish.

This picture was taken the day I removed the bones for the first time of the hanging hindquarter. I tried the technique at the small hindquarter of veal and transferred it to the hindquarter of beef. Practical to have a hindquarter of veal in the cold store as well.

To try it out first made it easier for me to remove the top cover with aitchbone of the hindquarter of beef. I knew where I have to cut, because I did it before.

I removed the bones in vertical and horizontal position of the hindquarter now. It was already clear for me while I did it vertical that I won’t ever do it this way again. Even the reason, that I don’t need so much strength for it doesn’t make me choose this way the next time. The only bone I remove in vertical position is the tail bone or however you call this bone in English. I mean the one, which is right on top of the aitchbone if you have half a cattle.

Why don’t I prefer to bone the hindquarter in vertical position? Well, I am not the tallest. Which makes it even with a `platform´ hard for me to reach the position where I have to begin. It takes longer to trim the different parts too – perhaps I haven’t found the right technique yet. If I remove the bones of the hindquarter in a horizontal position, I remove the fat on top of the topside, before I start cutting the topside off the hindquarter. Or I roll the thick flank out of the surrounded fat. To do that is not very comfortable if the hindquarter has a vertical position.

Is the topside removed you have to remove the aitchbone from it – unnecessary work which can be avoided.

Luckily everybody can choose free which way to use for removing bones. The result is always the same: the trimmed topside gets in the shop and sold. How you boned the hindquarter doesn’t matter at all.

It makes sense to see and try out both ways. That’s the only way you can choose the best way for YOURSELF.
