Was gibt’s neues?

Seit gestern bin ich wieder in meinem Ausbildungsbetrieb – der Fleischerei Scheller in Hannover. Ich finde es immer total spannend zu erfahren was sich in der Zeit verändert hat, in der ich nicht im Betrieb war. Ganz so viel Zeit ist diesmal zwar nicht vergangen, aber Veränderungen gab es trotzdem. Anfang Oktober hat nämlich ein weiterer Azubi seine Lehre dort begonnen.

Ich erinnere mich noch gut daran zurück, wie schwer es für mich am Anfang war, mir zu merken, wo ich entlang schneiden muss. Sieht einfach alles gleich aus, wenn man sich noch nicht so auskennt. Und mittlerweile weiß ich genau, wie man den Deckel bei der Kugel entfernt oder das Fleisch sortiert. Beim Entfernen der Sehnen aus der Schulter habe ich aber immer noch meine Probleme – so viele Sehnen und dann genau wissen, wo die entlang laufen ist für mich hohe Kunst. Das wird aber sicher auch noch werden.

Die Produkte, die hergestellt werden haben sich nicht verändert. Klar gibt es die Jahreszeit typischen Produkte: Bregenwürstchen und Knappwurst im Gegensatz zum Sommer, doch diese kenne ich schon von den letzten 2 Jahren. Mal schauen welche Aufgaben in den nächsten Tagen noch auf mich warten. Morgen darf ich Maultaschen machen, darauf freue ich mich schon.

What’s the news?

I am in Hannover since yesterday to work at the butcher shop Scheller, where I serve my apprenticeship. It’s every time exciting to see what changed during the time I haven’t been there. Well, it hasn’t been much time, which I have been away. But there are changes. They have a new apprentice since beginning of October.

I remember very well how complicated it was for me at the beginning to memorize where to cut and where not to. It looks so similar, if you don’t know the different cuts, yet. By now, i know exactly how to part the meat pieces and how to sort the small meat pieces. To cut all the tendons out of the shoulder and to know where to find them is still a problem for me – that’s high art in my opinion. I am going to learn that through practise, that I know for sure. The products they produce didn’t change. Sure, they produce typical seasonal products, like `Bregenwürstchen´ and `Knappwurst´ now, but I learned how to produce these products already two years ago. Let’s see which tasks I get during this week. I am producing `Maultaschen´ (Swabian raviolis) tomorrow, that’s the only plan I know yet.
