Ich kann mich noch sehr gut an meinen ersten Arbeitstag in der Fleischerei Scheller erinnern und jetzt steht in einer Woche schon die erste Prüfung an. Montag, der 28. Januar 2019 ist mein Termin für die theoretische Zwischenprüfung. Sieht ganz so aus als ob’s langsam mal Zeit wird das nötige Fachwissen zu vertiefen 😉
In Fachtheorie sind das die folgenden Themenbereiche:
- Einführen eines neuen Mitarbeiters/ einer neuen Mitarbeiterin – dabei geht es vor allem um die beruflichen Interessenvertretungen, das duale Berufsausbildungssystem, Arbeits- und Unfallschutzvorschriften, Hygiene und die Einteilung der Wurstwaren/ Gewürze
- Beurteilen und Zerlegen von Schwein oder Lamm – dieses Thema beinhaltet die Einteilung in die verschiedenen Handelsklassen, die Qualitätsanforderungen an das Fleisch und deren Überprüfung/ Erhaltung, sowie die Grob- & Feinzerlegung
- Herstellen von Hackfleisch – die dafür zu beachtenden rechtliche Bestimmungen, Temperaturanforderungen und Fleischauswahl
- Herstellen von küchenfertigen Erzeugnissen – dabei spielen Leitsätze für spezielle Fleischstücke, Filetzuschnitte, Roastbeefzuschnitte, sowie die Auswahl der richtigen Fleischstücke für das jeweilige Gericht eine wichtige Rolle
- Informieren über Fleischereiprodukte – im Zentrum dieses Lernfeldes stehen Werbung, Inhaltsstoffe des Fleisches, die drei Wurstkategorien und auch Zusatzstoffe
- Beurteilen und Zerlegen von Rind – dessen Klassifizierung, Fleischreifung und dann auch Zerlegen von Rind und Kalb bilden die Inhalte des letzten für die Theorieprüfung wichtigen Lernfeldes
Mit Fachtheorie ist es aber noch nicht getan, die Prüfung hat noch zwei weitere Teile: Mathematik und Politik.
In Mathematik ist vor allem Basiswissen gefordert:
- Gewichtsumrechnung
- Preisberechnung,
- einfacher/ umgekehrter Dreisatz
- Prozentrechnen mit erhöhtem/ verminderten Grundwert
- Gewichtskalkulation
Und zu guter letzt fehlt noch die Allgemeinbildung, also Politik. Dort wird in 60 Minuten das Wissen in folgenden Bereichen geprüft:
- Berufsausbildung und Arbeitswelt
- Grundlagen des Arbeitsrechts
- Sozialversicherungen
- Grundlagen des Vertragsrechts
- Soziale Marktwirtschaft
- Umgang mit Geld
- Unternehmensgründung
- Entlohnung der Arbeit

The countdown is running
I can still remember my first day of work at the butcher shop Scheller, as if is was yesterday and now I have already my first exam in a week. Monday, the 28th of January 2019 is my day for theoretical intermediate examination. Seems like it is time now to get all the technical terms in my head now😉.
Means to have a look at the following subjects for theory:
- Introduction of a new employee – it´s mainly about the different representors of interest, the dual apprenticeship system (work and school), industrial safety, accident prevention, HACCP-concept and the classification of sausages and spices
- Assessing and disassembling pig or lamb – contains the different commercial categories, quality requirements of the meat and the disassembling
- Making minced meat – and keeping the legal regulations, temperature requirements and the right meat selection
- Producing convenience products – therefore it is important to know the guiding principles for special meat cuts: filet cuts and roast beef cuts as well as which meat part to use for which dish
- Informing about meat products – in the centre of this chapter is advertisement, meat constituents, the three sausage categories and the different food additives
- Assessing and disassembling beef – the contents are the classification of beef, meat aging and disassembling beef or calf
But theory is not everything the other two parts of the intermediate examination are mathematics and politics.
Math is in general about basics we all should know:
- converting from kg in g or the other way around
- price calculation
- simple/ reversed rule of three
- percentage calculation
- weight calculation
The last part is now general education, means politics. There we get examined for 60 minutes in the following sectors:
- apprenticeship and working world
- basics of the labour law
- social insurances
- basics of the contract law
- social market economy
- money management
- company foundation
- remuneration for work
