Leberkäse kuttern

Schon vor einigen Monaten wurde mir in der Fleischerei Scheller gezeigt wie man für die Brätherstellung vorgeht und mittlerweile kann ich das schon ganz allein.

So geht´s:

  • Fleisch, Fett und Eis im richtigen Verhältnis abwiegen
  • Nitritpökelsalz und Kutterhilfsmittel NUR für die Menge an Fleisch und Fett abwiegen
  • Gewürze und Umrötehilfsmittel für die Gesamtmenge (Menge an Fleisch, Fett UND Eis) abwiegen
  • Röstzwiebeln ebenfalls für die Gesamtmenge wiegen
  • Fleisch in den Kutter geben
  • Nitritpökelsalz und Kutterhilfsmittel dazu
  • einige Runden trocken laufen lassen
  • 1/3 Eis zugeben
  • Fett zugeben
  • bis 12°C kuttern
  • restliches Eis in den Kutter schütten
  • Gewürze und Umrötehilfsmittel bei 6°C untermischen
  • Kutter bei 8°C ausschalten
  • Deckel auskratzen
  • weiter kuttern
  • Röstzwiebeln untermischen bei 10°C
  • den Deckel nochmals auskratzen
  • entlüften
  • in die gewünschten Formen füllen

Und danach landet der Leberkäse vielleicht auch bei dir auf dem Tisch, entweder schon fix und fertig gebraten oder roh zum selbst backen.

Also bei mir darf Leberkäse auf keinen Fall beim Samstagsfrühstück fehlen und bei dir so?

 

Producing ‘Leberkäse’

‘Leberkäse’ is a traditional German food. You bake it in a form in the oven and  you eat it in a ‘Semmel’ (it’s a white bread bun) afterwards. You can see how it looks like at the picture of this post.

They showed me already a few months ago at the butcher shop Scheller how to produce sausage meat, and by now I can do it completely on my own.

This is how you do it:

  • weigh meat, fat and crushed ice in the right relation
  • weigh nitrite salt and phosphate ONLY for the amount of meat and fat
  • weigh spices and reddening agents for the amount in total (amount of meat, fat AND ice)
  • weigh dried roasted onions as well for the total amount
  • put the meat in the cutter
  • add nitrite salt and phosphate
  • let it progress some rounds
  • add 1/3 crushed ice
  • add fat
  • progress until 12°C
  • add now the rest of the ice
  • mix the spices and the reddening agents in at 6°C
  • stop the bowl cutter at 8°C
  • scrape out the cover
  • go on with the processing of the sausage meat
  • mix in the roasted onions at 10°C
  • scrape the cover out again
  • fill it in the mould you want

After I am finished it get sold. And it’s possibly on your table, either already baked or raw, so you can bake it yourself.

‘Leberkäse’ can’t be missing at the breakfast on Saturday morning in my opinion. What do you think about it?

Süße Träume werden wahr

Seit langem stand mein Wochenende mal nicht im Sinne des Fleisches, sondern es ging einzig und allein um Süßes.

Am Sonntag habe ich angefangen Käsesahnetorte zu backen und heute dann ein Blech gedeckten Apfelkuchen – meine zwei Lieblingskuchen. Was davon ist denn euer Favorit?

Ich glaube ich spreche im Namen aller Metzger, mit der Aussage “Süßes geht immer“, sonst wäre jetzt nicht schon wieder alles bis auf ein paar Krümel aufgegessen.

Ein Glück, dass ich in meiner Freizeit auch gern backe oder Rezepte für neue Desserts ausprobiere.

 

 

Sweet dreams come true

The last weekend was the first, since a long time on which I didn’t work with meat – I have only been making sweet stuff.

I started on Sunday with making cheesecake and today a tray of apple pie – my two favourites. What would be your favourite?

I think I speak in the name of all butchers if I say “it always possible to eat sweets“- which explains why there are already only some crumbs left.

How good, that I like making cakes or trying out new recipes for desserts in my free time.

Praktische Zwischenprüfung: Teil 1

Ab heute habe ich den ersten Teil meiner praktischen Zwischenprüfung auch endlich hinter mir. Heute früh habe im Betrieb bei Fleischerei Scheller noch einmal alles geübt: Zerlegen, Rollbraten und Spieße.

Um 13 Uhr war dann Beginn der Prüfung in den Räumen von Wurst Basar.

So und jetzt beantworte ich mal die Fragen aller Fragen: Was kam dran?

Uns wurde ein halbes Schwein gestellt, welches wir grob Zerlegen mussten. Nachdem dieser Schritt abgeschlossen war ging’s weiter mit ladenfertig zuschneiden: Schulterteller, dicke Rippe, Kotelett, Filet, Oberschale, Krustenbraten, salzfertige Hüfte und Eisbein.

Nach erster Abnahme der Zuschnitte und der Fleischsortierung durften wir schon den Hals auslösen.

Diesen sollten wir dann schnüren und drei Scheiben zum Kurzbraten abschneiden. Des Weiteren war noch gefordert drei Fleischspieße herzustellen. Dafür habe ich die Oberschale verwendet und Würfel geschnitten.

Als letzten Schritt dann noch alles schön dekorieren auf zwei separaten Platten: Braten und Spieße – dann war die Prüfung auch schon vorbei.

 

 

Practical intermediate examination: part 1

I have finally absolved the first part of my practical intermediate examination today. I have trained at the butcher shop Scheller one last time, today in the morning everything: disassembling, rolling roasts and making skewers.

At 1pm it was already time to start the exam in the production of Wurst Basar.

Now the answer to the question you probably want to ask me since the beginning of reading my report: What did you have to do?

We got half a pig and had to disassembly it. After we had done this, we were allowed to go on with preparing the different meat parts: shoulder round cut, pork loin, filet, topside without cap, rump, silverside and shank for the counter – to say it easy „make them look nicely“.

After everything got checked it was allowed to go on, boning the neck.

From the neck we had to make a roast, cut three slices for grilling from it and present it on a plate.

On an other plate we had to put three skewers and decorate them with vegetables as well.

That’s it, the exam is over.

Perfektes Weihnachtsgeschenk

Von meiner Schwester und meinen Eltern habe ich zu Weihnachten einen Kochkurs geschenkt bekommen. Heute war ich dann bei diesem Kochkurs bei La Cocina in Hannover.

Dort haben wir verschiedenes Rindfleisch verkostet: Brisket, Hereford Rumpsteak, US-Rib-Eye, Bison-Rib-Eye und Wagyu-Rib-Eye.

Vom Iberico Schwein gab’s Presa.

Dazu haben wir gemeinsam verschiedene Beilagen zubereitet: Kräutersoße, Zucchini, Kartoffelspalten, Süßkartoffel-Püree, gebratene Champignons und Blattspinat.

Als Dessert gab’s dann eigens zubereitetes Tonkabohneneis und Schokokuchen auf Blaubeerspiegel. Spontan dazu dann auch noch Kaiserschmarrn, da unser Kochlehrer aus Österreich kam.

War ein super toller, lehrreicher Nachmittag und alles andere als langweilig, wie alle anderen Wochenenden in Hannover.

 

Perfect Christmas Present

I got from my sister and my parents as Christmas present a cooking class.

I have been there, at La Cocina in Hannover today.

We have been tasting different beef: Brisket, US-Rib-Eye, Buffalo-Rib-Eye and Wagyu-Rib-Eye. And of the Iberic pig we had Presa.

As sides we prepared: a sauce with herbs, zucchini, roasted potatoes, sweet potato puree, fried mushrooms and spinach.

For Dessert we had self-made ice-cream and a chocolate cake with blueberry sauce.

And since our teacher came from Austria, he made spontaneously Kaiserschmarrn (a traditional pancake).

It was a really good way to spend the afternoon, I have learned a lot.

In den letzten Tagen habe ich einmal wieder eine kreative Bewerbung geschrieben. Diesmal um ins Team für die World Butchers‘ Challenge 2020 in Sacramento aufgenommen zu werden.

Neben diesem Rezept habe ich auch noch ein mehr oder weniger normales Bewerbungsanschreiben mit integriertem Lebenslauf verfasst, sowie ein Bewerbungsvideo gedreht.

 

 

Acceptance in the wolf pack?

I have written an other creative application in the last few days. This time to get part of the team for the World Butchers‘ Challenge 2020 in Sacramento.

In addition to this recipe I have written a more or less normal application with integrated curriculum vitae, as well as filmed a short clip.

Was haben denn Erdnussbutter und Quinoa in der Fleischerei zu suchen?

Heute gabs mal wieder einen Special-Job für mich in der Fleischerei Scheller. Vor einigen Wochen habe ich euch ja schon die „Bacon Bombs“ vorgestellt – mit Käse gefüllt und Bacon umwickelt.

Diese habe ich heute wiederhergestellt und noch dazu eine völlig neue Variante -mit Erdnussbutter gefüllt und gepufftem Quinoa ummantelt.

Eine wahre Geschmacksexplosion im Mund, mit der süß-salzigen Erdnussbutter, dem crunchy Bacon und Quinoa außenherum – solltet Ihr auf jeden Fall mal ausprobieren.

Was würdet Ihr gerne als Füllung oder Topping sehen?

Das zeigt wie vielseitig der Metzgerberuf ist. Man kann nur ein paar Zutaten gegeneinander austauschen und erhält ein anderes Produkt.

Es macht einfach total Spaß immer wieder etwas völlig neues auszuprobieren – auch wenn man manchmal nicht weiß wie genau das Endprodukt aussehen wird.

Ich freue mich schon auf das nächste Experiment – mal schaun was da ansteht 😊 – auf jeden Fall erfahrt Ihr hier davon.

 

 

What are doing peanut butter and quinoa at the butcher shop?

I have had a special-job at the butcher shop Scheller today. I have already told you about the „Bacon Bombs“ a few weeks ago – filled with cheese and wrapped in bacon.

Today I have done them and a different variation – filled with peanut butter and breaded in puffed quinoa.

It´s a very tasty combination with the sweet-salty peanut butter, the crunchy bacon and quinoa around it – you should really try it.

What would you like to see as filling or topping?

Being a butcher means a lot of different jobs and products, how you can see. Just changing some ingredients and you have a completely different product.

I like trying out different things – even if I don’t know sometimes how the final product looks like.

I am curious about the next experiment – let’s see what it is 😊 – I am going to tell you about it here, for sure.

Zwischenprüfung

Ich hatte heute Zwischenprüfung. Während wir unsere Prüfungen geschrieben haben, hat eine Lehrkraft meiner Schule: BBS2 das Berichtsheft kontrolliert. Dieses mussten wir vollständig ausgefüllt und unterschrieben zur Prüfung mitbringen.

Hier mal einige Fragen die drankamen:

 

Fachtheorie:

Nennen Sie die Garverfahren und insgesamt acht Fleischteile, die Sie den jeweils geeigneten Garverfahren zuordnen.

Intermediate examination

I have written today my intermediate exams. We have written our exams and a teacher of the BBS2 (my school) controlled our apprenticeship report. It was our duty to bring it with us completely filled out and signed.

Here some questions I got asked:

 

Theory:

Name the different cooking methods and in general eight meat parts and which cooking method you use for them.

Name the three different Roastbeef parts and for each part two steak cuts.

What is ergonomy? Give to examples.

Describe the cooking methods „roasting“ and „stewing“ and give for each an example and two possible side dishes.

Name the danger zones of a knife.

First aid: deep cuts, faint, burn injuries

Name the different categories of spices.

Name five spices and and give an example for what you use them.

Name the subcategories for boiled sausages, cooked sausages and raw sausages.

Name six different federal states and for each a regional speciality.

 

Mathematics:

change fractures to decimal fractions

gross wage and net wage

reduction and discount

weight calculation

 

Politics:

How long is the probation period during the apprenticeship?

Name two duties of the apprentice.

Name two duties of the boss.

How long is the probation period of an employment relationship?

Name two reasons for a termination without notice.

What are the five social insurances?

Name one service of each social insurance.

Which social insurance pays the boss completely: 100%?

Name the 7 payroll deductions prescribed by law.

 

 

Der Countdown läuft

Ich kann mich noch sehr gut an meinen ersten Arbeitstag in der Fleischerei Scheller erinnern und jetzt steht in einer Woche schon die erste Prüfung an. Montag, der 28. Januar 2019 ist mein Termin für die theoretische Zwischenprüfung. Sieht ganz so aus als ob’s langsam mal Zeit wird das nötige Fachwissen zu vertiefen 😉

 

In Fachtheorie sind das die folgenden Themenbereiche:

  • Einführen eines neuen Mitarbeiters/ einer neuen Mitarbeiterin – dabei geht es vor allem um die beruflichen Interessenvertretungen, das duale Berufsausbildungssystem, Arbeits- und Unfallschutzvorschriften, Hygiene und die Einteilung der Wurstwaren/ Gewürze
  • Beurteilen und Zerlegen von Schwein oder Lamm – dieses Thema beinhaltet die Einteilung in die verschiedenen Handelsklassen, die Qualitätsanforderungen an das Fleisch und deren Überprüfung/ Erhaltung, sowie die Grob- & Feinzerlegung
  • Herstellen von Hackfleisch – die dafür zu beachtenden rechtliche Bestimmungen, Temperaturanforderungen und Fleischauswahl
  • Herstellen von küchenfertigen Erzeugnissen – dabei spielen Leitsätze für spezielle Fleischstücke, Filetzuschnitte, Roastbeefzuschnitte, sowie die Auswahl der richtigen Fleischstücke für das jeweilige Gericht eine wichtige Rolle
  • Informieren über Fleischereiprodukte – im Zentrum dieses Lernfeldes stehen Werbung, Inhaltsstoffe des Fleisches, die drei Wurstkategorien und auch Zusatzstoffe
  • Beurteilen und Zerlegen von Rind – dessen Klassifizierung, Fleischreifung und dann auch Zerlegen von Rind und Kalb bilden die Inhalte des letzten für die Theorieprüfung wichtigen Lernfeldes

 

Mit Fachtheorie ist es aber noch nicht getan, die Prüfung hat noch zwei weitere Teile: Mathematik und Politik.

In Mathematik ist vor allem Basiswissen gefordert:

  • Gewichtsumrechnung
  • Preisberechnung,
  • einfacher/ umgekehrter Dreisatz
  • Prozentrechnen mit erhöhtem/ verminderten Grundwert
  • Gewichtskalkulation

 

Und zu guter letzt fehlt noch die Allgemeinbildung, also Politik. Dort wird in 60 Minuten das Wissen in folgenden Bereichen geprüft:

  • Berufsausbildung und Arbeitswelt
  • Grundlagen des Arbeitsrechts
  • Sozialversicherungen
  • Grundlagen des Vertragsrechts
  • Soziale Marktwirtschaft
  • Umgang mit Geld
  • Unternehmensgründung
  • Entlohnung der Arbeit

The countdown is running

I can still remember my first day of work at the butcher shop Scheller, as if is was yesterday and now I have already my first exam in a week. Monday, the 28th of January 2019 is my day for theoretical intermediate examination. Seems like it is time now to get all the technical terms in my head now😉.

 

Means to have a look at the following subjects for theory:

  • Introduction of a new employee – it´s mainly about the different representors of interest, the dual apprenticeship system (work and school), industrial safety, accident prevention, HACCP-concept and the classification of sausages and spices
  • Assessing and disassembling pig or lamb – contains the different commercial categories, quality requirements of the meat and the disassembling
  • Making minced meat – and keeping the legal regulations, temperature requirements and the right meat selection
  • Producing convenience products – therefore it is important to know the guiding principles for special meat cuts: filet cuts and roast beef cuts as well as which meat part to use for which dish
  • Informing about meat products – in the centre of this chapter is advertisement, meat constituents, the three sausage categories and the different food additives
  • Assessing and disassembling beef – the contents are the classification of beef, meat aging and disassembling beef or calf

 

But theory is not everything the other two parts of the intermediate examination are mathematics and politics.

Math is in general about basics we all should know:

  • converting from kg in g or the other way around
  • price calculation
  • simple/ reversed rule of three
  • percentage calculation
  • weight calculation

 

The last part is now general education, means politics. There we get examined for 60 minutes in the following sectors:

  • apprenticeship and working world
  • basics of the labour law
  • social insurances
  • basics of the contract law
  • social market economy
  • money management
  • company foundation
  • remuneration for work

Bacon Bombs

Heute war ich etwas in der Vorbereitung für den Verkauf tätig. Angefangen damit, dass mir mein Chef – Herr Scheller – gezeigt hat wie man die Bacon Bombs herstellt.

Zuerst alle Zutaten für die Masse abwiegen und alles vermischen, dann die Käsewürfel für die Füllung schneiden – naja einheitliche Würfel schneiden sollte ich vielleicht noch etwas üben 😉.

Was könntet Ihr euch denn gut als Füllung vorstellen – schreibts mir in die Kommentare?

Die fertig gerollten Bombs noch mit Speck ummanteln, marinieren, Käse Topping drauf und ab in den Ofen und dann fertig gebraten in den Laden.

Des Weiteren habe ich Putengeschnetzeltes geschnitten. Dieses habe ich dann mit einer Feigenmarinade und Zuckerschoten vermengt, in eine Schale gefüllt und auch in den Laden gegeben.

Nicht nur diese zwei Sachen gab es heute neu im Tresen sondern auch Torte. Momentmal Torte?! Ja, Ihr habt schon richtig gelesen – Torte geht nicht nur süß sondern auch herzhaft #fleischislife.

Immer mal wieder was neues, da hab ich eindeutig den richtigen Ausbildungsberuf und Betrieb: Fleischerei Scheller gewählt.

Also wem’s da langweilig wird der ist selbst schuld!

 

Bacon Bombs

I have prepared today some things for the display. First of all my boss – Mr. Scheller – showed me how to make the bacon bombs. Therefore, I weighed all the ingredients and mixed them together.

After this I had to cut cheese cubes as stuffing – okay, honestly I have to practise cutting cubes a little bit more 😉.

What would you like to see as stuffing – write it in the comments?

The last steps were now to wrap the bombs with bacon, marinate them and putting the cheese topping on. After a little while in the oven they got out in the shop for selling.

After I finished this, I went on to cut turkey stripes, mixing them with a fig marinade and snap peas – finished and out in the shop.

These two were not the only new things in the counter today, there was cake as well. Wait cake?! Yeah, you have read correctly – cake can be savoury too not only sweet #fleischislife.

I have chosen definitely the right job and shop: butcher shop Scheller to serve my apprenticeship, there is always new stuff to try out and do.

It’s your own fault if you are getting bored!

Heute mal anders zerlegt

Normalerweise brauche ich ja zum zerlegen ein scharfes Messer, eine Säge und etwas Zeit.

Heut ging das aber etwas schneller – baddsch und alle Einzelteile liegen auf der Treppe verteilt!

Im Gegensatz zu üblich war dann das Zusammensetzen wieder dran – gar nicht so einfach – zum Glück hat mir meine Schwester geholfen, das Schwein wiederzubeleben.
Auf jeden Fall haben meine Eltern jetzt ein Unikat in der Sammlung 😅.

Boning different today

I need usually a sharp knife and a saw and some time for boning.

It was different and very fast today – bam and all the small pieces were spread all over the stairs!

Now I had to put the pieces together again – not so easy – I am glad my sister helped me.
My parents have at least now an unikat in their collection 😅.
